INGREDIENTS

Oxtail (3 lbs.)
2 Zucchinis
2 Carrots
2 Potatoes
1 Can of Garbanzo beans
1 Yuca (Optional)
½ Onion
4 Tbsp of Cilantro
3 Garlic cloves
1 Small Diced Tomato
2 Bay leaves
2 Pinches of cumin
Salsa Del Pato
Salt (Personal preference)

INSTRUCTIONS

  1. In a pot, fry onion, cilantro, garlic, tomato on low heat with some cooking oil.
  2. Add bay leaves, cumin, and Salsa de Pato.
  3. After 15 minutes, add the oxtail and salt.
  4. Cover and cook for 10 minutes.
  5. Add 2 liters of water, and cook for 1 hour and 15 minutes on high heat.
  6. Add veggies, yucca and garbanzos and 2 cups of water.
  7. Cook until veggies soften.
